Vegan, gluten-free pear muffins


These pear muffins are so delicious that they disappear almost immediately I take them out of the oven. I am so glad that everyone in my family likes them. The best part of all are the ingredients inside. These are gluten free, sugarless and non-dairy muffins.


Recipe:
In the first bowl:

  • 4 tbsp coconut oil
  • 4 tbsp macadamia milk (it may be replaces by coconut milk)
  • 1 tbsp cider vinegar
  • 1/2 cup maple syrup
  • 1 1/2 cup mashed pears (can be from a jar). Also here you can replace the pears with bananas


In the second bowl:
  • 3/4 cup gluten-free oats
  • 1 tsp. baking soda
  • 1/2 tsp baking powder
  • 1 1/3 cup gluten-free flour (I used almond flour)
  • 2 tbsp poppy seeds
  • 60gr. dark chocolate
  • pinch of salt
  • 2 tbsp chopped raw cashew


Mix the ingredients from the two bowls. Pour the batter into silicon muffins cup. Bake at 180 degrees Celsius until it's golden brown.
