Virginia's cake or another OREO cake

Virginia likes my Christmas Oreo cake that I made a month ago. That's why she (her mom) asked me for the same cake. The two tiers are combination of vanilla and chocolate layers. The first tier is with mini vanilla eclairs. The filling is fluffy chocolate cream. The cake is covered by Oreo butter cream.  I used chocolate ganache for decoration, French macaroons, cookies, candies, sprinkles, chocolate sticks and waffles.

Big eclair cake


Do you like eclairs? I adore them! That's why my today's post will be dedicated to this delicious dessert!



The recipe:
Layers:
100ml. milk
100ml. water
140gr. flour
1/2 tsp. salt
4 eggs
80gr. butter - room temperature

Cream:
150gr. sugar
600ml. milk
60gr. corn starch
2 eggs
130 ml. whipping cream
150gr. butter
3 tbsp. icing sugar
vanilla

Some instructions how to prepare the two layers:
Pour the water, milk, butter and salt in a small saucepan and heat it. When the mix starts boiling pour all of the flour. Continue mixing until a blend like a ball is formed. Turn off the heat, remove the saucepan from the pot and leave it to cool off. Then add the eggs one by one until you get a homogeneous mix.

Pour half of this mix in a 9" pan and bake it at 200 degrees Celsius for approximately 25 min.  Put a baking paper in the pan before you pour the mix. Bake the other half of the batter in the same way.


Meanwhile, you can prepare the cream.
Boil 500ml.milk. The other 100ml. of the milk add to the mix of the eggs, sugar, corn starch and vanilla. Then gradually add the boiling milk. Put the mix again in a pan and bring it to boil. Continue mixing until it's getting thick. Remove from the hot pot and cool it.
In another pan mix the butter (room temperature) with the icing sugar. Then add it to the cooled cream. Beat it with a mixer at low speed. 


The last step is to beat the whipping cream and to add it to the cream. Use a cake ring for this cake.

Put the first layer, attach it by a ring, pour the whole amount of the cream and add the second layer. Keep the cake in the fridge at least 3 hours.

On the top you can decorated as you want. Even you can leave it like that - simply delicious. I added some chocolate ganache and icing sugar.

Delicious muffins

 

Today I'll share with you some very delicious muffins made especially for my family. They are full of fruit and some vegetables, they are light and mouth-watering.


The recipe:
  • 2 eggs
  • 1 cup of brown sugar
  • 3 cups of finely cut into small pieces(or ground) apples, pears, carrots and pineapples.
  • 1/2 cup of avocado oil
  • 2 cups of flour
  • 1 tsp. baking powder


Pour the mixture in the muffin cups and on the top spread a blend of large flakes of whole grain oats, 2 tbsp of brown sugar and some of the ground fruit.
Bake at 180 degrees Celsius.

Almond cake


Today I made an almond cake for my family. I wanted to surprise them with something new and different. I hope they will like it. I found the recipe in my friend's blog  https://bubolinkata.blogspot.com/p/blog-page_23.html . 
I was attracted by this cake only looking at the photos. Everything looked so delicious to me that I was craving for a bite. I  postponed making the cake finding different reasons. Most of the time I was to busy or too tired. Finally the Big Day came. Hopefully I had most of the products. Those that weren't available I replaced them creating a new recipe. :) The original you can check in bubolinkata's website. I'll share with you the recipe that I used for this dessert.


For the layers I followed strictly Bubolinkata's recipe:

  • 50gr. butter-room temperature
  • 250gr. raw almonds
  • 100gr. icing sugar
  • 3 eggs
  • 3 egg whites
  • 25gr. flour
  • 1 tbsp. sugar



In preheated oven (160 degrees Celsius)  bake the almonds,  cool them and then grind them finely in a blender. Mix them  with half of the icing sugar. In a bowl beat the 3 eggs and gradually add the other half of the icing sugar. Then add the ground almonds and the butter. Add gradually the flour.
In a different bowl beat the egg whites with the sugar. When the fluffy mixture is ready add it to the first bowl.
Pour the blend in a 20cm pan lined up with baking paper. Bake 20-25 min in preheated oven at 180 degrees Celsius.



Now the filling. Here I made some changes because I hadn't any marzipan bar at home.
Filling:
500gr. mascarpone
1/2  milk chocolate finely ground in a blender
25ml. rum
1/2 cup whipping cream
1/4 cup icing sugar



After the almond layer is baked and cooled we cut it in 2 parts. The biggest part of filling we put between the layers. The other part we spread on  and around the cake. I knead marzipan and I place it  on the top of the cake. For the decoration I used melted chocolate ganache, raw almonds, finely ground almonds spread around the cake. Regarding the decoration the choice is yours.

Mini Cooper cake



My first Mini Cooper cake! My first cake for 2019!!!!



The cake was ordered by very close friend of mine who wanted to surprise her boss for his birthday.

I have never made a mini cooper cake. Even my 3D car cake are not so many. Being honest with you this is not my favorite type of cake because....because of my husband. Probably you are wondering why my husband is involved with the cake. I'll tell you the secret right now :)

My husband's passion are the cars and not only the cars but all tiny details describing a specific model. That's why when I make a car cake he always gives his professional advises and ideas. I really appreciate all this but I am making a cake out of layers and cream not out of metal or plastic parts which makes my part a little bit more difficult :)


Let's stop talking about my working experience with cars specialists and have a look of my Mini Cooper cake. Of course, I took so many pictures that probably you will be tired of me...
Some of the photos are taken at daylight, some of them are at night. You will notice the difference...I forgot to put the windscreen wipers on the front  and that's why I took more pictures later on. Of course, the light wasn't good but I'll share with you everything...





The cake is made out of chocolate layers with light chocolate filling. Then I covered it with chocolate ganache and at the end was the fondant. All decorations are edible and are made out of fondant.




I got pictures of the real car (my friend sent them to me) and I tried to copy all the details from there.
