Happy birthday Eva!


This cake Mickey Mouse and friends is for Eva's 3rd birthday. When her parents came to pick up the cake I met Eva for the first time - very charming little girl with enormous beautiful eyes and very attractive smile. At the beginning Eva was shy, of course but when she saw the cake the beautiful smile appeared on her face.
 
Her mother, Tatiana ordered the cake. She asked me for a cake based on the theme Mickey Mouse. We both decided that it would be a good idea if we put some plastic toys on the top - a nice surprise for Eva. Most of the photos I took with plastic toys that I have at home because I wasn't sure that I would have the chance to take a picture with the real toys that Eva's mother bought. Finally I took some pictures with Eva's toys. I give you all these explanations just not to wonder why the cake is the same and the characters are different. And now I'll share with you all different angles of the cake (if a round cake has any angles).

Almond flour muffins



Today I'll share with you a recipe that I tried this morning for the first time. It's very easy but the most important is that finally the muffins are incredibly delicious.
 
First preheat the oven to 325 F (160C)
The recipe is for 12 muffins.
 
Before I start with the recipe I'll explain you what I have changed...The real name is "Honey Applesauce Almond Flour Muffins". I replaced the honey with maple syrup. Of course, you can follow the original recipe. I am sure the taste will be irresistible.

 
Let's start:
3 cups almond flour
1 1/2 tsp ground cinnamon
3/4 tsp baking soda
1/4 tsp salt
1/4 granulated sugar - I used brown sugar
3/4 cup unsweetened applesauce
2 eggs
1/4 cup liquid honey - I used maple syrup
3 tbsp. unsalted butter, melted - I used unrefined virgin cocoanut oil
1 tsp vanilla extract
1 cup chopped walnuts
 
1. In a bowl, whisk together flour, cinnamon, baking soda and salt.
2. In another bowl, whisk together sugar, eggs, applesauce, honey, butter and vanilla until well blended.
3. Add the egg mixture to the flour mixture and stir until well blended. Gently fold in walnuts.
4. Divide batter equally among prepared muffins cups.
5. Bake in preheated oven for 25 to 30 min. Let cool in pan on a wire rack for 5 min., then transfer to the rack to cool.

Tinker Bell cake


Today's cake is for Stephanie's 4th birthday. Happy birthday, dear Stephanie!
 
This year her favorite movie character is Tinker Bell. That's why her mom ordered a cake based on this theme. I put a small figurine on the top of the giant purple flower. Stephanie likes very much when there is a cute toy on the cake. It's kind  a "Kinder-surprise" :) . There is a cake plus a small gift-toy for the celebrating girl.
The cake is chocolate with my favorite filling made out of mascarpone and fruit. Stephanie's mom also adores this filling and during all these years her only wish is this cream.
The other decorations - leaves and flowers are made out of fondant.

Happy birthday, my dear friend!


Happy birthday, my friend! I wish you all the best to you and your loved ones! Be happy and very successful!
 
Today one of my friends Nadia has a birthday. I wanted to surprise her with something sweet not only because she likes cakes and sweet treats but mainly because she deserves it. I felt so sorry that I couldn't find time and energy during the last days to make a cake for Nadia. But I wanted to surprise her and that's why yesterday I made some chocolate muffins (Nadia adores chocolate). On the top of them I made some leaves with lime frosting and in the middle I put a stick with paper poppy flower. It was very easy and I found them attractive. And I hope the muffins were tasty too.
When I bought the paper cupcakes and the sticks with the poppies a month ago immediately I knew that they are for Nadia. And I patiently waited for today :)

My homemade desserts

This morning when I woke up I had only one thought in my mind - "Just relax". I was 100% ready to do nothing all day long. I needed some rest, some place far away from the kitchen, the oven and the sink...I started planning how to relax in this rainy morning. But....(there is always one "but" ) my kids spoiled even the idea to do something for myself. It doesn't matter if I sleep or I am sick (they just don't notice my condition),they start pulling my hand and asking me something "very important". This morning my youngest daughter started with "I am hungry, I wanna eat.....I wanna eat..."When she repeated this phrase 4 times I completely forgot about my idea to relax today.
I went in the kitchen and started preparing the breakfast. After half an hour I was ready with 3 different ideas what to bake today :)
 
And now I'll share with you 2 of my homemade desserts.
Here is the first one - homemade brownie.
 



This dessert I made mainly for my son who adores all desserts with a lot of sugar and chocolate. Of course, everyone took a bite. On the top I put some candies.
 
Now the second one - homemade gluten-free muffins. They are mainly for me :) My kids are not attracted by this specific taste. The recipe is completely mine. I just used what I had at home - cocoanut flour, granola with dried fruit - blueberries and apricots, cocoanut oil, poppy seed, sesame seed and eggs....




 
And the third dessert that I prepared this morning I'll leave it for tomorrow. It's kind of small surprise :)

Pony cake


It's time to show you another pony cake. This time is for Nicole - very charming and energetic girl with beautiful curly hair. Yesterday she celebrated her 5th birthday and today was the birthday party with her friends.
All the decorations on the cake are made out of fondant and colored butter cream except the 2 ponies. They are plastic cake decorations and they are Nicole's surprise!
 
 
I tried to make very colorful cake with waterfall, butterflies, flowers, abundance of green leaves  and of course, rainbow....everything that a young girl adores. I used my favorite chocolate stones around the waterfall. And as I know all the kids love them.

Damian's first steps

 

Let's start today with a wish....
Dear Damian, I wish you a life without any big obstacles on its way. Or if there are some (let it be realists) treat them as stepping-stones that will lead you to something better. Step bravely and discover the beauty of the world!
Today's cake is for Damian. You have already met this cute boy who celebrated his first birthday at the end of July.
Some days ago he celebrated another important moment in his life - his first steps. That's why the cake is with these cute tiny training shoes. They are really very tiny. The size surprised even me when I made them out of one of my templates. I can't remember but probably last time when I made a cake with training shoes I modified the template....Anyway, I found them as a sweet memory to this special moment in Damian's life...The wish on the cake is created by Damian's mom - Trayana. As I mentioned in my previous post dedicated to Damian, Trayana is an amazing lady - very positive and energetic young mom.
