Carrot cake

This cake I made yesterday for my family. I made it extremely quickly. Even I was surprised by myself and my capabilities :)

I planned this carrot cake a long time ago . I adore this dessert, the cinnamon flavor, the carrots, the nuts...everything.

This time I put abundance of pineapple pieces and cranberries inside. Instead of the traditional cheese cream filling I made out one by myself :) The filling includes ricotta cheese, pineapple pieces and cream - very light and juicy.

I spread some white chocolate on the top and chopped walnuts. I made a board of finely chopped almonds.

And that's it. We are going to try it right now.
