Eclair cake

Today I made a cake that I planned a long time ago. I couldn't find any occasion to make it but the idea was all the time in my mind. Hopefully the inspiration didn't die with the time....And this morning when I got up I was absolutely sure that today is the day for my eclair cake. Here it's the time to mention that I adore eclairs. Simply eclairs and eclairs in a cake. But I would like to make something clear - I adore only these eclairs with crème pâtissière ( with yellow cream). The other one - with whipping cream, as a call it "white cream", it's to heavy, artificial  and tasteless for me. But that's my personal opinion....

For my cake I used vanilla sponge layer-8" (20cm), soaked with almond milk. Then I put the ring from my  8'' springform pan and started with arranging the mini eclairs on the top of the cake layer. Sometimes I cut the eclairs in two halves to fill the caps. Then I poured the cream that I prepared in advance. In my homemade vanilla creme I added 1 packet of gelatin to keep the cake stable because I didn't plan any other extra decorations or surrounding layers that will protect the creme from leaking out. Next time I'll try with agar-agar.  I am curious to see the difference.
I left the cake in the fridge for 4 hours, then I removed the ring and I decorated with ground dark chocolate (80% cocoa) and with cocoanut flakes. I used goji berries for the heart in the middle. 

Finally, I recommend this cake to everyone who prefers light and not too sweet cakes. And of course, everybody who likes eclairs. Also it's very easy made cake and you don't need a lot of time to prepare it (here I don't count the time and efforts if you decide to prepare the eclairs by your own). Plum cake

Yesterday I decided to make a cake for my family with a new recipe. Actually there wasn't any recipe. I made my own :) Hopefully I think that I found the right proportions. The cake was delicious, with light cream, perfect for the hot summer days. And here is my recipe:

Plum cake - The cake is made in 8" springform pan

 - thin decadent chocolate layer, deeply soaked with coffee

Cream
1/3 box of mascarpone ( 1 box is approximately 500g)
1/2 box ricotta
3-4 tbsp. sour cream
6 tbsp. agave syrup
approx. 300g dried plums previously soaked in water 
cocoanut flakes (optional)

Mix all the ingredients for the cream in a deep bowl using mixer. Then spread it over the chocolate layer, level it with a spatula and place the pan in the fridge. Leave it there for at least 4 hours. Then decorate it according  your taste. I put slices of plums and spread some cocoanut flakes around the cake. Cute bunny cake

Today's cake was for the first birthday of Dani's second child - Alexandre. Unfortunately I hadn't chance to meet the baby boy but I met the mother - very charming and attractive lady. I was impressed by her desire to pick up the best cake idea for her baby boy. She had found different cake photos,we discussed them together and finally we made a combination of two of the cakes. Of course, I added something from me - passion and love. I hope you will like the cute bunny cake too.

Yummy-yummy muffins

The last two days I was craving for simple muffins without any decorations,only with nuts and dried fruit. Although the weather was so hot and humid and definitely it wasn't the right time for that kind of desserts I couldn't get over my craving. 
Finally I decided to prepare something instead of just checking different websites with irresistibly delicious muffins and cupcakes. After so many mouth-watering photos I got down to work. For the muffin mixture I created my own recipe....I used granola with banana and almonds, organic rice puffs, dried cranberries and dried tropical fruit. I added one egg and the water from the previously soaked dried fruit. I didn't follow any exact measurements. And look at the final result.


 



I won't convince you how delicious are my muffins, I'll just mention you that even my husband who doesn't like any muffins or cupcakes told me "These are the most delicious muffins I have ever tried!"

Wedding anniversary cake with horse shoe

Hi everybody! I'm back from my vacation. Full of energy and a lot of positive emotions I am ready for the new cake season:) But before that I still have a cake that I made 2 weeks ago and I haven't posted it.
First, I would like to start with the wishes to the wonderful couple who ordered the cake. They celebrated their 6th wedding anniversary and their first one in Canada. I wish them love, strong and passionate, understanding and support! Being honest with you, the lady ordered the cake as a present-surprise for her husband.
She sent me photos with the cakes that she likes (all of them very stylish) and we made a combination of them. And look at the final result:



The cake is made of decadent chocolate layers flavored with coffee and the filling is my favorite - mascarpone , sour cream and wild berries.
I wish this couple good luck in the new country and a lot of precious and memorable moments spent together!

Heart cookies for a very special lady

These heart cookies I made as a present for a very special lady in my life. I won't mention her name now because I haven't asked her for a permission and that's why in my post she will be "Anna". Why Anna? I haven't any idea :) That was the first name that entered my mind....
I met this lady 12 years ago. She is a strong woman, always ready to stand up in front of any obstacles. She has never given up.Very ambitious and perseverant.  I have been always admiring her positive attitude in life and her incredible strength.
We haven't spent a lot of time together but the few months of our acquaintance were precious. Moments full of support and understanding, months of concern, commitment and encouragement. I admire that woman and I am very thankful that I have met her! Anna is an unique and  very precious friend.
Now you have an idea for whom I made the heart cookies...

Light summer cake

The cake that I'll show you today I made especially for my husband two days ago. It's was especially for him first because he had a special occasion on June 29th - his name day - St. Petar and secondly, because he adores that kind of cakes - with abundance of cream mainly one of my favorite cake fillings with mascarpone cream, sour cream and fruit. I make very often that filling with strawberries or with wild berries but this time I decided to change the fruit. I used puree of apples and peaches and for sweetener I used organic agave syrup. The base of my dessert is a mixture used for cheese cakes - ground cookies with cocoanut oil instead of butter. After I kept the cake overnight in the fridge I decorated with cocoanut flakes, raw almonds and raspberries. The cake is really very light and tender and the best part was that my husband was pleasantly surprised. He likes the new fruit change. Me too...
