Wild berries mascarpone dessert


Very delicious dessert!!! It's something like a cheese cake but made out of mascarpone. Very light and decadent. You can eat and eat and...eat. I adore it especially with wild berries. That's why I used the blackberries, blueberries, raspberries and strawberries.

Chocolate Easter cake


Happy Easter everyone!
This is my next Easter cake. The first one was very vibrant - inside and outside. This one is very chocolate - chocolate layers, chocolate frosting, chocolate ganache and chocolate bunny with 2 roosters...:)  I bought the bunny and the roosters two days ago. Right now the market is full of all different sorts and shapes of chocolate. The big choice of chocolate treats made my life easy and instead of preparing something by myself I immediately bought the very popular Easter characters.






The cream into the cake I made out of mascarpone, maple syrup and wild berries. The cake was attractive for my kids because there was a lot of chocolate and of course, there were these colorful chocolate eggs. For us, the adults, the cake was delicious because we adore the mascarpone filling. There was a little bit for everyone :)


Of course, I added some more sweet treats to make our life full of smiles and happy faces :)

Easter cake


Bright colors, sweet flavors, bird songs, warm sunny rays, gentle breeze in the hair....in one word - spring. Yes, spring is coming! My favorite season. Life starts again, we are getting stronger and full of energy to pursue our dreams.

For the upcoming Easter I came with a very vibrant cake. The fourth layers are dyed in four different colors - yellow, pink, green and purple. Very light strawberry cream attached the tender layers. I spread colored in green fluffy butter cream and then colored again coconut flakes. The eggs are real chocolate candies.




Being honest with you I had bought a special Easter ribbon to put around the board. But it was so hard even to take the pictures before my kids started destroying the cake :)

Flower raw cake


Let's start the new week with something sweet and....healthy! Today I'll share with you,my virtual friends, a raw cake that I made for a friend.



The recipe is:
  • 1 cup of ground raw almonds
  • 1 cup of ground raw hazelnuts
  • 3 cups of dried dates - I soaked them
  • 1 cup pf dried organic blueberries
  • 1/2 cup of dried cranberries
  • 1 cup of water
  • carob powder
  • 1/2 cup of chia seeds
  • 1/2 cup of melted coconut oil


All these ingredients were mixed together in the blender.Then the mixture I put in a 20 cm pan and I put it in the freezer for 30 min.

The decorations:
  • sliced almonds at the bottom
  • cedar seeds on the top and 
  • fresh blueberries


As you can see nothing is bad for you! It's delicious and flavored and everything is natural! No colorants, no preservatives,no artificial sugar....! Enjoy it!

Gluten-free muffins - cornbread mix with pumpkin seeds



These gluten-free muffins were made almost a month ago but I have been completely forgotten about them. 
These small desserts are made with a ready-made mixture from a company in British Columbia which products I am using not for the first time. The mix is organic and I have already tried 4-5 different mixes that they sell on the market. This time the mix is made out of corn, a lot of spices and pumpkin seeds. I was wondering what kind of mixture it would be but it was really good. The first second you feel the sweetness from the corn, then you feel the spices but they really go well with the corn.
I used for this mixture organic coconut oil.

Gluten-free bread


Hi everyone! As you notice even from the title of my new post, today I'll share with you something different from what I'm making- my favorite cakes.

Today I'll dedicate my post to something salty, something different, something according to me, healthier. Here, it's the moment to mention, that this type of bread is not for everyone. From one side, gluten-free breads are the only choice for the people with gluten intolerance. But the rest of us, who can eat product with gluten, we are two types - people who like gluten-free food or people who completely dislike it. Definitely, it's different. The taste is different. Even me (I have tried a lot of different gluten-free mixes) sometimes I can accept them, sometimes they are awful, sometimes they are delicious. Today I'll share with you a very delicious recipe.


For this bread I used a ready-made multi-grain bread mix made by the company Cuisine Soleil. The mix is organic. The ingredients in this mix are: brown rice flour, amaranth flour, buckwheat flour, tapioca and potato starch and xanthan gum.




The recipe that I used is:

  • 2 cups of this bread mix
  • 2 tbsp. brown sugar
  • 2 tsp. dry yeast
  • 1 tsp.salt
  • 3 large eggs (room temperature) + 30 ml. water
  • 2 tbsp. vegetable oil
  • 1 tsp. apple cider
  • 250 ml. water (warm 90 degree C )


Directions:
  1. Sift the flour twice.
  2. Put the flour in a bowl, add the brown sugar and mix
  3. Add 1/2 cup of the warm water in a small bowl, add the yeast and mix
  4. In a bowl whisk the eggs and 30 ml. of water with the oil, the yeast, the salt, the vinegar and the rest of the water.
  5. Combine the liquids and dry ingredients together.
  6. Whisk with a mixer 2-3 min. The dough will be thick.
  7. Pour in a lightly pre-greased mould.
  8. Let it rise until it doubles the size (about 40 min.)
  9. Preheat the oven at 325 degree F. Bake for 40 min.
  10. After 25 min, cover with a piece of aluminium foil if the dough darkens too quickly.
  11. Wait 25 min before taking out of the mould and cool before slicing.


I baked some of the dough in a bread pan and the rest I spread in mini cupcakes. On the top I spread some dried rosemary. 





I found this bread simply delicious. But instead of talking, it's better if you try this recipe. Good luck!

Easter cookies


Easter is almost at the corner...That's why after the simple and easy to make and decorate muffins I started with the cookies. This year I decided to make cookies only in one shape. I bought an egg metal cutter and I was ready :) At the last moment I added some cookies in the shape of a bunny head. Just for fun for my kids...



This year I changed my decorating material. I replaced the fondant (only 2 cookies are covered by fondant) with icing. I used different colors sparkling gels by Wilton, food color sprays, different color and size peаrls, some candies, flowers...

Now it's time for the photos. Be ready! Take a break!
I would like to thank my older daughter who helped me a lot with the decoration.


















I hope I gave you some ideas for the upcoming Easter. And the best part is that your kids can participate. The kids adore working together with mommy, helping, learning different new techniques. Close your eyes for the full mess and enjoy the moment!
