Rice Crispy dessert

Today I'll show you an idea for a dessert with rice crispy and chocolate transfer sheet. I found the idea somewhere in the net and immediately I decided to make the experiment. My kids adore rice crispy. That's why I decided that it will be interesting to mix chocolate and rice crispy.
During the preparation I took some pictures and I hope they will give you an idea how to prepare that easy and quick dessert.
  • First, we start with melting the chocolate chips. You melt 2/3 of the desired amount and after that you add the rest. Continue stirring until all the chips are dissolved.
  • After that, cut the rice crispy bars into tiny pieces and add them to the melted chocolate chips. Stir well.
  • Spread the mixture on the transfer sheet.If you make thinner layer it will dry quicker. 

  • After a while the layer will be dry and you can carefully peel it from the acetate.On the next picture you can see how it looks like.



Here I would like to apologize for the pictures but while I was taking them I didn't pay any attention that they are so awful. I was concentrated on the chocolate transfer sheet...
  • Then break the sheet into pieces with different irregular shapes.
  • You can fill a bag and make a nice surprise to your kid, to the neighbor's kid,to some friends...

Christmas candies

Let's add something else to the Christmas cake and mousses...some homemade  marbled chocolate candies.





Christmas mousse

It's light and fluffy. It's a nice dessert that makes you not to fill full and fat at the end of the last spoon. I used a small part of it as a filling for my Christmas cake
As I promised you I'll give you the recipe and I hope you will enjoy it.

Mint flavor mousse
2 cups (500ml) sour cream
3/4 cup granulated sugar
1 tsp green food color (I used 3 teaspoons but as you can notice I am far away form the green color)
1 cup whipping cream

I added 1 teaspoon of mint flavor. The flavor is your personal choice.
On the top I decorated with pieces of a Holly Leaves transfer sheet and some ground chocolate.

Christmas cake

I have been interested in transfer sheets for a long time...I have watched so many videos on  www.youtube.com how to use them, how to make candies, how to decorate mousses or cakes. For me the transfer sheets are the final touch for all high couture pastries. Unfortunately you can't find them in all shops for baking supplies.
Here is the one that I have found and I was pleasantly surprised how nice and helpful is the stuff there. They gave me a lot of instructions, advices and ideas and I am very thankful about their help. My son was also very happy there because while I was shopping he was treated with many delicious chocolate candies.
Now I will present you the cake that I made using the transfer sheet. It was easy and funny and definitely it was worthy to make this experiment.



As you can see the cake is made of 2 chocolate layers and for the filling I used a new recipe that I'll share with you in my next post. What you can't see is the light green color of the cream but I'll leave this to your imagination:). The filling is really very light and makes the cake not so heavy and sweet. I filled some cups with the rest of the cream for the people who prefer lighter desserts.


I used small pieces of the transfer sheet to decorate the mousses. There are so many different designs of the transfer sheets on the market that you can create unique desserts for different occasions. That's why go for it!

More Christmas cookies

I made some more Christmas cookies with cookie cutters that I bought an year ago from IKEA and I completely forgot about them. The package is not exactly for Christmas. It's with some forest animals - a bear, a moоse, a hedgehog,a squirrel... and of course, you can use them for all different occasions. 
I bought an enormous snowflake cutter some days ago from Michaels store and I wanted to use it immediately. Unfortunately, I didn't decorate the cookies so nicely as it was shown on the photo of the price label but my kids enjoyed them and actually that is the purpose of cookie making.




Happy birthday,Krisi!

Today's cake was for the 8th birthday of a very charming girl Krisi. She chose to have a cake with a horse head. By the way when I was looking for some ideas in Internet I found that most of the birthday cakes with horse heads were for kids at the age of 8! Which I found very interesting!
I hope that Krisi liked what I made for her although the horse was a little bit different from the photo that her mother sent me. If I should be honest with you there were a lot of emotions around the cake. First I liked the challenge to make something different. There is always a thrill when you have to create something new of what usually you are doing. Besides the thrill there was some fear. I was scared if I'll make the horse looks alive. The eye was a small element form the cake but very important. The look of the horse makes the whole cake. The 2 chocolate layers with mascarpone cream filling with wild berries is covered with homemade fondant which I found very soft and easy to work. The homemade fondant is very good to make small decorations and figures. I made an ivory fondant and after that I painted with brown color. The mane I made with chocolate frosting and I used some dark brown color candy writer. 
The horseshoe is my idea for good luck and happiness. We decided to add the rein which wasn't on the original photo but according to me it makes the horse more real.

Classic Christmas Fruit Cake

Let's prepare something classic for the Christmas holiday. We made the Christmas cookies and now it's time for the fruit cake. The preparation is very easy and you can keep the dessert well for a couple of weeks if it's stored in an airtight container.


Just follow the recipe and you will have another dessert for the upcoming holidays.

Serves: 8 to 10
Preparation: 15 min.
Baking time: 1 1/2 to 2 hrs.

Ingredients:
3/4 cup (175ml) unsalted butter, softened
3/4 cup (175ml) raw sugar
zest of 1 orange, finely grated
4 eggs
1 1/3 cup (325ml) all-purpose or cake flour
small pinch of salt
1/2 teaspoon (2ml) pumpkin pie spices
1 teaspoon (5ml) baking powder
2/3 cup (150ml) ground almonds
2 tablespoons (30ml) corn syrup
120 g each currants, raisins and sultanas
60g mixed peel
2 tablespoons (30ml) good quality brandy

Decoration: 1/3 cup (175ml) whole blanched almonds

In advance: Grease and line an 8-inch (20cm) round cake pan. Preheat oven to 150 C.

1. Beat the butter, sugar and orange zest together until light and fluffy.
2 Add the eggs and mix well.
3. Sift the flour, salt, spices and baking powder. Add ground almonds and syrup and mix.
4. Add the dried fruit and brandy and mix well.
5. Spoon into prepared pan and bake for 1 1/2 to 2 hrs.Half way through baking,arrange the whole almonds on top.
6. Allow the cake to cool in the pan before serving.

As you can see from my pictures I replaced the almonds on the top with walnuts. And I put some oranges and red cherries.



Cake for a great medical achievement or great love



Today's cake was ordered by the husband of one very ambitious young lady. She passed a very important and very difficult exam in her professional study as a nurse. Her husband wanted to surprise her for her great achievement .
First,congratulations to the lady about all her perseverance, hard work and high results.
Here I would like to mention that I was very impressed by husband's attitude. Not because he ordered a cake but the way he wanted to show his love, care and respect in that important for the whole family moment. He chose a raw cake and he suggested something that is related to her professional field and of course the favorite color of his wife-red.
Although the cake was ordered in the last moment and my time was completely busy I couldn't say "No". How can you say "No" to a man who shows his great love and support to his better half. In a second I organized my time and everything was under control. I worked during the night. My eyes were tired of the light but finally I made it. I was very proud of myself, very happy and impatient to surprise the wife.
