Pear raw cake


Today's raw cake is for a birthday. The base is made out of chopped walnuts and almonds. The sweetness comes from the dried dates, cranberries and maple syrup. I also added chia seeds, coconut oil and coconut milk.

The cream layer is made out of raw cashew and pears.
  • 2 cups of raw cashew soaked overnight or 2-3 hours in hot water. Drained and ground in the blender.
  • 3 pears peeled and chopped together with the cashew in the blender
  • 1 tbsp almond butter
  • vanilla extract


For the decoration I used tahini, almond butter and maple syrup.

It's very light and delicious, non dairy and gluten-free dessert.
